The Spark Behind Table’s Inclusive Culinary Vision
Hello, I’m Krystal, the founder of Table. My journey to creating a catering service that truly values inclusivity and thoughtful food experiences. At a recent business networking event at a 4 star hotel, I was reminded of the challenges of eating out with a special diet.
As someone who adheres to a vegetarian, egg-free, dairy-free and wheat-free diet – vegetarian by choice and the others due to medical necessities, dining out has frequently been a test of patience and resilience. This was starkly highlighted at the event I attended. While other guests were served a sumptuous roast chicken dinner, my meal was a stark contrast: a simple salad with lettuce, tomato, beets, and broccoli, alongside plainly cooked vegetables and dry potatoes. While the fresh fruit for dessert helped me exceed my five-a-day, it wasn’t quite enough to satiate my appetite for the day.
This experience wasn’t unique to me; it’s a common scenario for those with special dietary requirements. At the same event, a young girl at my table faced similar anxieties, waiting for her meal while others enjoyed theirs. It was a poignant reminder of how such situations can lead to feelings of isolation and inadvertently become the focal point of dinner conversations.
This was a turning point for me. It became clear that event catering could be more empathetic and inclusive. That’s why, at Table, we’re committed to ensuring everyone enjoys a positive dining experience, irrespective of their dietary preferences or restrictions.
My background as a self-taught cook has been an asset in this mission. It empowers me to be innovative, to step outside the typical culinary box, and to embrace the challenge of developing new, appetising recipes. Our philosophy is straightforward: special dietary needs don’t necessitate a completely different or substandard menu.
